Good haddock can be incredibly good. Especially when paired with Icelandic butter.
In the fall, when the new dried fish season begins for us, we always fillet the haddock first.
Then we wait for the first continuous frost. The wait can be long, but when the weather forecast shows us what we want to see, we hang it on the shelf.
When it works out well, after 5-6 weeks on the shelf, the haddock has turned a crystal white color.
Making dried fish naturally is similar to being a winemaker – you are completely dependent on the weather, which ultimately determines the quality of the product.
